Sheet pan sausage and vegetables is an easy and family-friendly dinner that comes together in just 30 minutes! Chopped veggies and sliced sausage are roasted in the oven until beautifully browned and caramelized.

Here’s what you need to make this easy dish:
- Sausage of your choice – Polish sausage (kielbasa), German sausage (Bratwurst). or Italian sausage works great here. I used an Austrian sausage called Käsekrainer which is a pork sausage with bits of Emmentaler cheese inside. It’s super delicious.
- Vegetables of your choice: I used broccoli, bell pepper, zucchini, and red onion.
- Olive oil and spices – use spices listed or your favorite spice mix, for example: Italian seasoning, Cajun seasoning, Old Bay seasoning, or French seasoning.
- Cheese – I used just parmesan but mozzarella or Emmentaler would also be great.
Make it differently
What you could also use:
- potatoes (cut them into small cubes so they have time to cook through)
- sweet potatoes – cut them into cubes
- butternut squash – cut into cubes
- cauliflower – divide into florets
- eggplant – cut into cubes
- grape or cherry tomatoes
- brussel sprouts – cut them in half
- mushrooms – leave small mushrooms whole, cut larger mushrooms in half or into quarters
- another protein such as chicken (flattened chicken breasts or thighs) or shrimp (they will only need 3-4 minutes)
- I don’t recommend using carrots (they will need a longer baking time) or potatoes that have been cut in half or into large chunks (they will also need more time
- you could drizzle your cooked vegetables with pesto
How to make it
Preheat the oven to 425°F (220°C).
Prepare a large baking sheet (full-size baking sheet 18×26 inches or 45×65 cm or similar). If you don’t have such a large baking dish you can bake the ingredients on two smaller baking sheets and turn on the fan setting (400°F/200°C) or bake them separately in two batches.
Make the spice mix: combine olive oil with the spices.
Prepare the sausage and vegetables: cut broccoli into florets, sausage into thin slices, bell pepper into large cubes, zucchini into thick slices (at least 1/2 inch or 1.5 cm), and onion into thick slices.
Toss the vegetables with the spice mix (sausage is usually already spiced so I toss it with just a small amount of the seasoning and use most for the vegetables), season with salt and pepper.
Bake for 20 minutes or until browned.
Take the baking sheet out of the oven and sprinkle hot sausage and vegetables with parmesan cheese.
