Malibu Bay Breeze is a delicious and easy drink, made with only 3 ingredients: Malibu (coconut rum), pineapple juice, and cranberry juice. I stumbled upon it when I was looking for recipes to use up the Malibu liquor that I had left from making the Pina Colada cocktail. Malibu Bay Breeze is sweet, fruity, and very refreshing. If you’re wondering what to mix with Malibu, this is the easiest and most delicious option.
Ingredients
Here’s what you need to make this cocktail:
- Malibu liquor (coconut rum).
- Pineapple juice – I used store-bought unsweetened pineapple juice.
- Cranberry juice cocktail – you need to use cranberry juice that is sweetened and not pure cranberry juice which is too tart for this drink. If you have pure cranberry juice you can also use it but you need to make a simple syrup to sweeten the drink. If you prefer cocktails that are more tart, you can just use unsweetened cranberry juice. Cranberry juice that is sweetened with other fruit juices (like apple and pear juice) will also work. How to make simple syrup: mix equal parts of granulated sugar and water, cook in a small pot until sugar is dissolved then leave to cool. Add to your drink until it is sweet enough for you.
You will also need ice cubes to chill the drink. You can also use crushed ice. How to make crushed ice: just put ice cubes into a ziplock bag and pound them with a rolling pin or a bottle until crushed.
How to make it step-by-step
Making this drink is extremely simple. Just add equal parts of Malibu liquor, pineapple juice, and cranberry juice cocktail into each serving glass or into a large pitcher. Stir and serve with ice.
How to layer the drink (to see the color layers):
- Pour the Malibu liquor into the glass.
- Pour the pineapple juice on the back of a teaspoon, slowly and in a thin stream.
- Next, pour the cranberry juice the same way.
Don’t stir! Carefully add a couple of ice cubes to the drink. It’s ready!
You can garnish the drink with pineapple wedges. Maraschino cherries would also be a lovely addition.
Make it ahead
If you don’t care about the layers, the Malibu Bay Breeze can be easily made ahead. You can prepare a big pitcher of this drink and store it in the fridge until ready to serve. Serve chilled or with ice cubes.
How strong is this cocktail?
This is not a strong cocktail. It contains a small amount of vodka and a lot of fruit juices so it’s rather weak than strong, but be careful – it’s so easy to drink that you can easily drink too much!
Similar drinks
Bay Breeze drink has many different names (like Downeaster, Hawaiian Sea Breeze, or Tropical Bay Breeze), depending on what kind of liquor you’re using. Usually, vodka or rum (light rum or coconut rum) is added. Vodka and rum provide a more neutral taste to the drink, while coconut rum adds tropical flavors.

20 February 2021 at 00:04I’ve been bartending for over 7 years… when making a Malibu bay breeze you do NOT need sweetened cranberry juice or simple syrup! You mix pineapple juice with coconut rum and a splash of cranberry! Ice in the glas to the top, 1 oz of coconut rum, fill the glass with pineapple and top it off with a splash of cranberry juice. That is all!!! The only reason I’m commenting this is bc im over people telling bartenders we didn’t make the drink correct bc you were taught wrong. ❤️Kadi

18 June 2021 at 22:02Its not about right or wrong it’s to taste. Some cant handle pure cranberry some can. Maybe instead of getting upset you simply ask if they prefer a sweeter drink or a sour. I was a bartender as well and the key is to know your clientele. If they ask for it make them aware you prefer straight cranberry apposed to a cocktail. If they ask for cocktail use that if on hand. If not then see what is similar that they would prefer.
