These healthy apple muffins are a lighter version of traditional apple muffins and are made with whole wheat flour and sweetened with maple syrup and honey. Apple flavor comes from finely chopped apples and apple sauce. They are fluffy, moist, and lightly sweetened. They make a delicious healthy breakfast for kids.

What kind of apples to use: choose sweet and soft apple variety. I used Gala apples.
What makes these muffins healthier than traditional apple muffins?
- they are made with whole wheat flour instead or white flour
- they are sweetened with maple syrup, honey, and apple sauce, instead of white sugar.
- they are made with coconut oil instead of butter.
I won’t say that these muffins are as good as regular apple muffins made with white sugar and white flour. They’re just not, especially for a person that is accustomed to eating such muffins. But I can assure you, for healthy muffins, they are really really good. Delicate, moist, stuffed with lots of apples. I pack them in lunch boxes for my kids. They make a great guilt-free breakfast on the go!
How to make healthy apple muffins step by step
Preheat the oven to 350°F (180°C).
STEP 1: Add all the wet ingredients into a large bowl (eggs, coconut oil, maple syrup, honey, vanilla, apple sauce, yogurt).
STEP 2: In another bowl, whisk together all the dry ingredients (flour, baking powder and soda, salt, cinnamon).
STEP 3: Add the dry ingredients into the wet ingredients. Whisk until almost combined.
STEP 4: Peel and core the apples. Cut them into very small cubes. Add the apples to the muffin batter.
STEP 5: Stir gently with a spatula until evenly distributed. Don’t overmix the batter.
STEP 6: Line a muffin pan with 12 muffin liners. Divide the batter evenly between the liners.
Bake for 23 minutes or until a cake tester or a wooden skewer inserted into the center of the muffin comes out clean.
Let cool for 5 minutes on a cooling rack then enjoy!
Storage
These muffins keep really well in the fridge for up to 4 days. I usually reheat them in the morning in the oven at 325°F (160°C) until warm and then pack them into lunch boxes. They make a great make-ahead breakfast.
They also freeze well. You can freeze them for up to 3 months. Thaw in the fridge overnight then reheat in the oven/microwave in the morning.

- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 teaspoons cinnamon
additionally:
- 2 cups apples chopped into small very cubes 240g

- How to measure flour: I’m using the “spoon and level method” so 1 cup of flour in my recipes weighs 125g. Fluff the flour by stirring it in the bag/flour container with a spoon. Spoon the flour and sprinkle it into your measuring cup. Sweep off the excess flour with the back of a knife.
